Instructions
Step 1: Prepare the red velvet layer
Preheat oven to 350°F (175°C). Grease and line a 9x13-inch baking dish with parchment paper.
Prepare the red velvet cake mix according to package directions, adding 1 teaspoon of vanilla extract for extra flavor.
Pour the batter into the prepared dish and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Let cool completely.
Step 2: Make the cheesecake layer
In a large bowl, beat the cream cheese and sugar until smooth.
Add eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
Spread the cheesecake mixture over the cooled red velvet layer. Step 3: Prepare the Strawberry Layer
In a small saucepan over medium heat, combine sliced strawberries and strawberry preserves. Cook for 5 minutes, stirring occasionally, until the mixture thickens slightly. Let cool.
Step 4: Layer and Chill
Spread the strawberry mixture evenly over the cheesecake layer.
Chill the dessert in the refrigerator for at least 4 hours, or until set.
Step 5: Make the Whipped Cream Topping
In a chilled bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
Step 6: Assemble and Serve
Spread the whipped cream over the chilled dessert. Garnish with extra sliced strawberries or red velvet cake crumbs if desired.
Cut into squares and serve.
